Crunchy Onions Strings


      I have finally realized that there is a way to make these beautiful little suckers at home! Chris and I used to just go out to eat to have these things! Now I don't have to get out of my yoga pants at all!



Start with white onions


Peel and clean onions

Slice so thin that you can see the knife through the onion. Or shave, I think that it a more appropriate word

Put in bowl, cover with butter milk, dredge in a combination of flour, salt, pepper and Cayenne pepper

Deep fry, I use vegetable oil


Ahhhhh the beauty of these!

     I love these so much they were amazing!

Rosemary Dinner Rolls

     These were heavenly, not that I would know much about that. But I would recommend making these at least once a week. I am convinced they are good for your soul. 

Drizzle oil (any kind) in cast iron pan



Smooth oil all over pan with paper towel

So it looks like this


I made me own but you can use any store bought unbaked bread rolls

Cover for at least 2 hours and let rise

     Here is where I got distracted. Before you put them in the oven chop fresh rosemary. Brush rolls with butter. Sprinkle chopped rosemary and course sea salt over the rolls and bake at 400 until brown like these babies.
Add more butter!

EAT!
     These were so fantastic. I cannot wait to have them again!

Jalepeno Wraps

All you will need

Soak picks

Cut in half

Remove seeds and veins

Place on rack in pan so the grease has somewhere to drip

Fill with cream cheese and I mean fill

Wrap bacon

 
Don't these look delicious

mmmm... bacon. Oh and stick pick through these so that the bacon doesn't fall off when cooking


     Bake these at 375 until the bacon is cooked you your liking. Some people like it rubbery (gross) and some people like it more on the crispy side!


     From now on I think I am going to format the blog more like this. The pictures and the recipe is too much for my busy lifestyle (aka my rerun watching schedule)

Pico de gallo chicken

     This was one of Chirs's favorite recipes:

Skill Level: Easy
Prep: 20 Min
Cook: 45 Min

Ingredients: Pico de gallo
  • 1 Onion
  • 4 Plum or Roma tomatoes
  • 1 Serrano pepper
  • 2 Tbs white vinegar
  • 2 Tbs Olive oil
  • Garlic powder
  • Salt
  • Pepper (maybe a tsp of all three, maybe more depending on what you like, I always add exta garlic)
Ingrdients: Chicken

  • 4 Chicken breasts (trimmed)
  • 1/2 cup parmesian cheese
  • 1/2 cup cheddar cheese
  • 6 Tbs medium heat taco sauce
  • Salt
  • Pepper
  • Garlic powder
  • Garlic salt
  • Chili powder
Directions:

  1. Make pico de gallo first:
  2. Chop peppers into into squares
    
    Dice tomatoes
    
    Chop onion small
    
    Add to bowl
    
    Add spices and liquids and mix together
     
  1. Preheat oven to 350
  2. Put chicken in oven for 35 min
  3. Take chicken out of oven but do not shut the oven off
  4. Spread taco sauce on chicken
  5. Mix together and add cheese to the top of chicken breasts liberally
  6. Bake for 10 more minutes
  7. Plate food and add pico de gallo to the top of chicken breast

We had mexican brown rice too!

House Divided Pasta

     I hate fighting with my husband I really do, but yesterday we got into it for basically no reason. I am also one of those people that when we fight, I just want him to get the F away from me. So, I knew I had to make dinner but I didn't want him to step in on my food, so I came up with this:

Skill: Intermediate
Prep: 10 min
Cook Time: 30 min
Ingredients:
  • 1 Can vodka sauce
  • 2 Handfuls of green beans (fresh, chopped in 1/3 size pieces)
  • Asparagus tips (fresh)
  • Whole wheat pasta
  • Butter
  • 1 Chicken breast
  • 12 Mini meatballs (I use Kirkland brand Italian style meatballs)
  • Mozzarella cheese (Shredded)
  • Italian seasoning
  • Olive oil
  • Salt
  • Pepper

Recipe:
  1. Start the water for boiling with oil and salt in it.
  2. Preheat oven to 375 and throw in the chicken breast and meatballs for about 20 minutes
  3. Put vodka sauce in small sauce pan and simmer, add 2 tsp olive oil, 2 tsp butter and 1/4 cup water
  4. Saute up the green beans and asparagus tips until they still crispy
  5. Throw pasta in and cook for 13 minutes or until tender
  6. Drain pasta
  7. Put pasta, sauce and veggies in a serving dish. Make sure you can put this dish in the oven!
  8. Slice chicken and cover 1/2 of the pasta with that and 1/2 with meatballs
  9. Add mozzarella cheese and Italian seasoning
  10. And bake at 375 till the cheese is golden brown.


Obviously I had Texas Toast with mine but you don't really need it of you don't want it. So there it is. You stay on your side of the dinner and I'll stay n mine. Happy fighting!

Here We Go!

     I love to cook and I figured that since I don't have a life I would make another blog and tell you guys what I cook throughout the week! I always take suggestions on what you guys want me to make!
     For simple recipes that any idiot can make, I will just detail how its done. For ones that are a little harder, I will take pictures and walk through it step by step.

Chili

     I have never been much of a chili buff so here is my easy way of doing it so that I don't really have to think too much about it and focus on the important things in life such as television.

Skill Level: Below easy
Prep Time: 10 min
Cook Time: 10 min

Ingredients:
  • 2 Lbs Ground beef, chicken or turkey.
    Really whatever you like. If you want to get really fancy maybe I'll divulge the Saloon's recipe one day. Please hold your breath.
  • 2 Packets of chili seasonings (I usually use McCormick)
  • 4 Cans of tomato sauce
  • 1 Can kidney beans (I don't like beans but feel free to use another can) Undrained
  • 1/2 Finely chopped red onion
  • As much cheddar cheese as you can put on it
  • Sour cream if you like (I do not)
Directions:
  1. Brown meat in giant pan.
  2. Drain fat
  3. Add all cans, onions and seasoning packet to pan*
  4. Let simmer for 10-20 minutes to blend all ingredients
  5. Serve very hot and add CHEESE!!!!
* After I brown meat I actually just throw it all in the crock pot for an hour or so seems to bring out the flavor more
